Unfit food and damaged stock

All unfit or damaged stock should be segregated and thoroughly examined before use. Suspect food should be clearly marked as ‘unfit’ or ‘not to be sold!’ A suitable dustbin or container may be designated for the purpose. If there is any doubt regarding the fitness of food it should be discarded, or the local Environmental Health Department may be asked for advice. This includes food which is contaminated, spoilt, date-expired, unlabelled, temperature-abused, suspected of causing food poisoning or subject to a food alert warning. Food items with damaged packaging must not be used for food processing or offered for sale. Damaged packaging may expose food to physical or microbiological contamination.
