The greenhouse effect
Food, especially high-risk food, should not be stored in windows or in glass display cabinets exposed to direct sunlight. The heat within the cabinet will build up in the same way that it does in a greenhouse, providing conditions ideal for bacterial multiplication. The greenhouse effect may even occur in chill cabinets without proper chilled air circulation, and fluorescent tubes may exaggerate the problem.
