Vehicles used for the distribution of high-risk food must always be insulated and preferably refrigerated, even for short journeys. Insulation of the roof and floor is just as important as the insulation of the walls. Properly located thermometers should be fitted in to all vehicles. Vehicles must be maintained in a clean and tidy condition. Raw food should never be transported with high-risk food unless they are completely segregated to avoid any risk of contamination. Stacking of vehicles should facilitate sufficient air circulation around the food.
