Contamination

Precautions must be taken to avoid contamination. Raw food must always be kept apart from high-risk food. It is recommended that separate, clearly labelled units be used. If only one refrigerator is available, high-risk food must be stored above raw food. Shelves previously used for raw foods must not be used for high-risk foods without cleaning and disinfection. All foods should be adequately covered to prevent drying out, cross-contamination and the  absorption of odour.
