Cabinets should be loaded correctly so that cold air inlets are not obstructed and load lines are not exceeded. Only chilled products should be placed in display cabinets. Radiant heat can have a significant effect on food stored in chilled cabinets, particularly on the upper shelves. Cabinets, therefore, should be sited away from heating units and high-intensity lights and out of direct sunlight.

Retail staff should immediately report to their supervisors items removed from chilled of frozen storage by customers. If these foods are left out at ambient temperatures frozen items may begin to defrost, and chilled foods could enter the ‘Danger zone’. Any bacteria present in the food will begin to multiply.
