Food spoilage and preservation welcome
Immediately vegetables and fruit are harvested, fish are taken from the sea or animals are slaughtered, they start decomposing (spoiling). There are two ways in which this can occur:
- by the action of natural chemicals (enzymes) already in the food. These are released known as autolytic (or self-splitting) enzymes; and
- by the action of enzymes from bacteria, moulds and yeasts. These are released by the organisms to break down the food so that it can be absorbed by them.
